Our fruit distillates

Fruit distillates are increasingly in demand both from Northern Europe and from companies in Central Europe. With a wide selection of products from historical partners with proven experience, we know how to recommend the right fruit distillates for the right needs. Among the fruit distillates traded are:

  • Distillates from “Williams” Pears
  • Distillates from Cherries
  • Distillates from Apricots
  • Distillates from Apples

How is a distillate made?

To obtain an excellent distillate, the quality of the selected fruit is essential. Equally important is the copper apparatus where the distillation process occurs, operated by steam. In addition to the rigorously and consistently monitored fermentation of the fruit, what is important for a quality distillate is the combination of the constituent sugars of the fruit with the selected yeasts. This must occur in the right proportions and, above all, at the appropriate time. The aromatic notes that are “captured” by the alcohol molecules are trapped by the steam, which is then cooled to be reconstituted in liquid form. It is this final liquid that is called fruit distillate.

The longer the product is left to age, the more it builds day by day that pleasant taste and harmonious aroma typical of fruit distillates. According to Italian law, before it can be called such, the distillate must undergo one year of aging; only then can it be called a fruit distillate.
